Fresh, wholesome ingredients for a real treat

– 6 g of fresh brewer’s yeast
– 670 ml of water
– 400 g of timilia flour
– 400 g of 0 flour (with good strength)
– 200 g remilled durum wheat semolina
– 30 g of salt
– 20 of evo oil
– Cream of potato and pecorino cheese
– Artichokes sautéed with oil, garlic and parsley
– Carpaccio of codfish (to be added raw), marinated with oil, pepper and oranges

 

Codfish pizza recipe: instructions

  1. Start by preparing the dough by mixing water, flour and yeast in a bowl. After the process is finished, this type of dough will require 18 hours of rest in the refrigerator.
  2. After 18 o’clock has passed, you can form the loaves (with this dosage, you will make 7 loaves of about 240 g). Once made, let them rest 6 hours at room temperature.
  3. Turn on the Crosti electric oven and let it go to temperature for 10 minutes at level 2.
  4. After the 10 minutes has passed, turn the knob to level 3 and wait 5 minutes. At this point the firing chamber should have reached 400C° and the firestone the temperature of 320C°.
  5. Roll out the dough on a wooden board. If you like Neapolitan-style pizza, try not to thin the edges too much.
  6. Arrange the cream, artichokes, and raw cod carpaccio. If you want to add a touch of elegance, you can grate an orange over the pizza.
  7. Bake for 2 to 3 minutes with a baking stone at 320/330 degrees.
