INGREDIENTS
- 300gr chopped Jerusalem artichokes
- One chopped onion
- 60cl of evo oil
- One teaspoon of chopped chives
- One sachet of saffron
- A pinch of salt
PREPARATION
In a high-sided saucepan put the oil, onion, Jerusalem artichokes and let the ingredients season for 2 minutes.
Then season with salt and cover with a glass of hot water. Add saffron and let cook 10 minutes in a saucepan.
Now blend the sauce and accompany it with grilled squid skewers.
